Ingredients

  1. 4Medium Sized Onions
  2. 1 tspGinger-Garlic-Green Chilli paste
  3. 2 tbspChopped Green Coriander Leaves
  4. 1 tspRed Chilli Powder
  5. 1 tspCoriander Powder
  6. 1/2 tspTurmeric Powder
  7. 1 tspCarom Seeds (Ajwain)
  8. 1 tspMango Powder (Amchoor)
  9. PinchGaram Masala
  10. Juice of 1 lemon
  11. PinchBlack Rock Salt
  12. 1 tspSalt (to taste)
  13. 1.5 CupGram Flour (Besan)
  14. 1/4th cup Cornflour
  15. Oil for deep frying

Cooking Instructions

    Chop the onions in longitudinally & separate all layers.

    Add Ginger-Garlic-Chilli paste, all dry spices (less Rock Salt & Salt). Add Lemon Juice. Mix with onions.

    Add Oil in a pan & begin heating. Oil needs to be moderately hot while frying (175° to 185°).

    Add Rock Salt & Salt to onions. Mix well & let it rest for a minute for onions to sweat.

    Add Besan & Cornflour in three batches. Keep kneading by hand to make a Onion-Besan mix. No need to add any water. Let the water from onions only bind the batter.

    Make small sized fritters from the mixture & deep fry in oil till golden brown.

  7. 7

    Take out the fritters on an absorbent paper & serve with Ginger Tea.
