Aloo Masala with Amaranth Greens

This special Aloo Masala is made with Amaranth Greens for a twist. Not only is it healthy and delicious but also made quite easily too. I added a twist to it in the form of these healthy Greens. The recipe is absolutely the authentic except for the use of Amaranth Greens/Leaves.
That's the beauty of this super duper wonderful Veggie. It's a yummy side dish that goes very well with Dosas, Puris and Chapatis. This one is simple and easy too. It tastes awesome with anything. One of the most liked side dishes for the first meal of the day, it therefore is a parmesan feature at many a Breakfast tables.
It is an amazing South Indian style side dish with Dosas. Apart from the different Chutneys and Sambar, this Potato side dish is also the most loved one. With Amaranth Greens added, it becomes even more nutritious and flavourful. The taste is also awesome. My family relished it for Breakfast today and loved this Green Aloo Masala every bit.

Cooking Instructions

Boil potatoes using a little salt at first. Do not peel them. Pressure cook them accordingly and let the pressure settle down on it's own before opening the lid of the cooker. After done, peel them and cut into cubes. Wash the amaranth leaves thoroughly. Drain well. Chop roughly and set aside.

Meanwhile heat oil in a kadai and add asafoetida along with some black mustard seeds. After they crackle, add curry leaves and shredded ginger. Keep the heat on a low.

Now add sliced onions and saute until translucent. Next add the green chillies, salt and the roughly chopped amaranth greens. Saute it well for about 4-5 minutes before adding the boiled and cubed potatoes. Cover and simmer for 10-12 minutes on low heat only.

After 10 minutes, garnish with freshly chopped coriander leaves. Serve it piping hot with your favourite dishes. Enjoy!

Ganike soppu is a widely known herb by many regional names like Ganike or Kakke soppu in Kannada, Manathakkali keerai in Tamil.
