Local Jollof Rice

My method cooking is usually inspired by my background. Having an Igala Dad and an Ijaw mum helps me modify cooking methods to suit my taste.
Cooking Instructions

Wash and Per boil the rice. Pour Per Boiled rice in a colander to drain the water

Wash and boil the ram meat
- 3
Get an empty pot. Pour vegetable oil in it and add some palm oil. fry the meat half way. Add onions,fresh pepper
- 4
Add the ram meat stock,seasonings and after 2 minutes,add the rice. Allow to cook till rice is soft.

Add the chopped ugwu leaves, cover the pot for 2 mins and the local Jollof Rice is ready.

My husband taught me that salmon fried rice was hard to mess up, so I just went ahead and made it and it turned out great. As long as you follow the tips, you can vary it by adding lettuce, kimchi, bacon, or whatever you like.If you are having fried rice for lunch, take the rice out of the freezer the night before. If you're having it for dinner, take the rice out in the morning right after you wake up. I can't explain it well, but if the frozen rice defrosts enough to be nice and separate, it's good to go.
