Ingredients

6 servings
  1. 4 cupWater
  2. 1 cupTomatoes (diced/seasoned canned if available)
  3. 1 smallV8 or vegetable juice
  4. 1 packagesOnion soup mix (or large diced onion)
  5. 1 tspMinced garlic (or more, to taste)
  6. 1 headCabbage (cut into bite sized pieces)
  7. 1 largeGreen bell pepper (cut into bite sized pieces)
  8. 2 largeCarrots (sliced)
  9. 1 headCauliflower (cut into bite sized pieces)
  10. 5 largeMushrooms (sliced or can of sliced mushrooms)
  11. 3 stickCelery (sliced)
  12. 1Salt and pepper

Cooking Instructions

    In a large pot mix onions, tomatoes, garlic, vegetable juice and water and bring to a boil.

    Add chopped cabbage, carrots, cauliflower, and celery.

    When vegetables are partially cooked, add green peppers and mushrooms, then continue cooking until vegetables are cooked but firm, stirring occasionally.
