Cooking Instructions

Mince the onion and garlic. Heat olive oil in a pot, lightly sauté the garlic, add the onion, and sauté until translucent.

Add tomato purée and shio-koji and simmer for 15 minutes. Season with pepper to taste.

All-purpose, basic tomato sauce is not just limited to italian dishes - it's adaptable in many ways, so please try this out.If sterilizing jars is too much work, you can freeze the sauce in ziplock bags. The reason why I used different size jars is that I use different amounts when use the tomato sauce for making pizza sauce vs. making pasta sauce.
