Cooking Instructions

Soak urad Dal & moong overnight.

Wash the Dal & grind them into fine paste.(Don't add water while grinding)

Beat the batter for 5 mins.It will be light and fluffy.

Add salt & jeera into the mixture.

Take a kadai & heat oil.Add spoonful of the batter into the oil & deep fry them.Fry till the vadas are crisp & golden.

Drop these vadas into a bowl of water for 10-20 mins.

Meanwhile whisk the yoghurt in a bowl.Add little sugar into mixture.

Squeeze the excess water from the vadas & transfer into a bowl.Put yoghurt mixture over the vadas.

Sprinkle cumin powder,black salt,chilli powder,chaat masala, tamarind date chutney,mint chutney on top.

Garnish with bhujia & pomegranate pearls.

Serve chilled.

And this is an out-of-the-box recipe and is inspired by an aunty ji, the cook who stayed with us for four days, during the time of marriage, and all the guests in the house went gaga over dahi bhallas made by her. She asked us to use 2 portions of moong dal to 1 portion of urad dal. This way, the bhallas would come out super soft and delicious, she says. This recipe makes use of electric beater to beat the batter until smooth, thick, airy and fluffy. It also makes use of an ice-cream scoop to make it super easy to drop batter into the hot oil and so as to have equal sized bhallas. Here, I have documented the steps required.
