Sesame Crusted Tuna Sear with Soy Garlic Sauce

  1. For Tuna Sear
  2. 1) Sushi Grade Tuna Steaks
  3. 2) Black and White Sesame seeds
  4. 3) Tuna Marinade- a) 2btsp evoo b) fresh dill c) fresh coriander
  5. 4) Salt and pepper
  6. Soy Garlic Sauce
  7. 1) 4 garlic cloves sliced
  8. 2) 2 tbsp ginger strips/
  9. 3) 2 tbsp scallion white part
  10. 4) 2 tbsp evoo
  11. 5) 1.5 tbsp sesame oil
  12. 6) Few cayenne pepper slices. I had some so used it to add some heat. You can chilli pepper flakes too
  13. 7) Some fresh dill and coriander. I used it to marinade the tuna, might as well use it here. They give excellent flavor
  14. 8) ¼ tsp sugar to balance out the tanginess
  15. 91) stalk scallion. Just the green part

    Step 1 – Marinating the Tuna steaks
    Its important to use sushi grade Tuna. The doneness of the steaks depends on your personal preference. Ideally, rare would be the best way to taste the Tuna and its flavors. You would also want to consume the tuna in a safe way. So get the tuna from a reputable store and ask for sushi grade tuna.

    Otherwise you would have to cook the tuna fully. Season the steaks (both sides) with salt and pepper. I used pink salt. Any salt will do. Chop some fresh dill and coriander. Mix it with evoo and brush it on the steaks (both sides) and marinate for 10 mins. While the steaks are marinating let’s go and make the soy garlic sauce.

    Step 2 – Soy Garlic Sauce
    Heat evoo on med heat. Add sesame oil too. Add sliced garlic, ginger strips and scallions. We will just infuse the oil with flavors. So the heat and time is important here. The cook time will only be 1-2 mins. As soon as the garlic gets a nice golden color stop cooking and remove to a small bowl. Let it rest, as the flavors will get mixed in the oil. Lets go and get the Tuna steaks a sesame crust.

    Step 4 – Sesame crust for the Tuna steaks
    Take the herb oil marinated steaks, sprinkle and rub sesame seeds on all sides. I didn’t totally encrust the steaks in sesame seeds. You could do that too.

    Step 5 – Searing the Tuna steaks
    Heat evoo on high heat. They key is to sear them when oil is extremely hot. It will create a nice crust and tuna wont break when flipping. It’s a quick sear too. For rare, as I like them, its only 1-1.5 mins/side. They cook pretty fast. Once searing is done remove and rest the steaks. Lets go and finish the soy garlic sauce

    Step 6 – Final touches on Soy Garlic sauce
    By now the oil has taken in a lot of flavor from the garlic, ginger and scallions. Add some fresh dill and coriander. I used them to marinate the Tuna steaks. So just added them. Fresh herbs always gives a great flavor. Add some sugar to balance out the sauce. Add the sliced cayenne peppers for some heat. I had them at home, so used them. You can use pepper flakes, black pepper or whatever you choose for heat. Or simply skip it. Add julienned scallions.

    Step 7 – Sides
    I always like to use what I have in stock. Its entirely up to you what sides you would like to have. I had some zoodles, so decided to incorporate that with some red pepper and mushrooms. I sautéed them with sesame oil, salt and pepper.

    Slice the seared Tuna steaks, plate it with your sides. Add the soy garlic sauce on the steaks and dig in !!
