I always look for ways to make meals interesting incorporating different flavors and cuisines. This is a very easy way to make flavor packed fusion Kofta Kebabs. These can be cooked on a pan, grilled or baked or even poached.

  1. 1.5lbs ground chicken
  2. 2tsp minced ginger
  3. 2tsp minced garlic
  4. 1/4cup scallion (green part) (optional- save the bottom part)
  5. 2heaped tsp miso paste (white)
  6. 3tsp soy sauce
  7. 1egg
  8. 1cup panko breadcrumbs
  9. Salt and pepper to season
  10. 5tbsp oil
  11. 1tsp sesame oil (optional)
  12. Dipping sauce
  13. 3tsp soy sauce
  14. 1tsp hoisin sauce
  15. 1/4tsp garlic powder
  16. 1/2tsp sugar

    Step 1- add minced ginger and garlic, scallions miso paste, soy sauce, egg, ½ cup breadcrumbs (1/2 cup will be used later), miso paste, salt and pepper to the ground chicken and mix well. I added the ½ cup breadcrumbs later. I find adding breadcrumbs in stages adds better texture

    Step 2- Wet your hands and make round shaped meatballs(or your preferred shape). My kids love round shaped meatballs.

    Step 4-Optional- In the same oil saute the bottom parts of the scallion for a min. add a splash of sesame oil for flavor

    Step 5- Dipping sauce- add soy sauce, sugar, hoisin sauce and garlic powder in a bowl and mix well. Enjoy !!!
