Hawaiian Poke Bowl with Quinoa & Teriyaki Salmon (for toddlers over 1 year)

The first time I tried a Poke ("poh-kay") Bowl was during a vacation in Montreal, Canada. It's actually a Hawaiian dish consisting of a "base" (rice, salad, or quinoa) and "topping" (raw salmon or tuna). When I returned to Switzerland, I couldn't find a good poke bowl, so I decided to make my own with ingredients I had in the fridge. My 20-month-old baby also enjoyed this poke bowl, and of course, WITHOUT raw salmon. So this dish can also be for toddlers, just set aside the raw salmon.

Ingredients

  • Base:
  • Quinoa as needed (can be replaced with rice or salad)
  • Topping:
  • 1carrot (steamed, julienned)
  • as neededWakame salad
  • Edamame as needed (steamed)
  • 1sushi-grade salmon or tuna (raw, marinated)
  • 2salmon fillets (for teriyaki)
  • Marinate Sauce (for Raw Salmon):
  • 2 tablespoonssoy sauce
  • 1 teaspoonrice vinegar
  • 1 teaspoonsesame oil
  • 1/2 teaspoonpepper flakes
  • Teriyaki Sauce:
  • 2 tablespoonssoy sauce
  • 2 tablespoonsbrown sugar
  • 2 tablespoonswater
  • 2 clovesgarlic
  • 1 teaspoonbutter

    Mix all Marinate Sauce ingredients in a bowl, stir well, and add the raw salmon. Store in the fridge until ready to serve.

    Heat a pan with a little oil, then grill the salmon for teriyaki over medium heat for 2 minutes on each side. Then reduce the heat.

    In another container, mix and stir all Teriyaki Sauce ingredients, except butter, then pour over the salmon in the pan. Cover the pan for 2 minutes. Uncover, flip the teriyaki salmon, add butter on top, and cook for another 1 minute with the pan covered. Turn off the heat and let it sit for 3 minutes. Uncover and remove.

    Serving method: In a bowl, arrange quinoa as the base. Add toppings on top, including teriyaki salmon, raw marinated sushi-grade salmon, edamame, carrot, and wakame salad.
