Ingredients

  1. 2large sweet potatoes, cut into noodles
  2. 3garlic cloves
  3. 1bell pepper diced
  4. 1/4 cupcoconut milk
  5. 6green onions
  6. 1/2 cupchopped peanuts
  7. firm tofu cut into 1 inch squares
  8. 2 tbspsoy sauce
  9. 1 tbspcornstarch
  10. DRESSING
  11. 1/2 cuppeanut butter
  12. 4 inchesginger
  13. juice of 3 limes
  14. 1 tbspsoy sauce
  15. 1 tbsprice vinegar
  16. 1 tbspoil
  17. water to thin

Steps

  1. 1

    Preheat oven to 400

  2. 2

    Combine tofu with oil and soy sauce. Then sprinkle with cornstarch.

  3. 3

    Place tofu on a baking sheet and bake 30 min until brown

  4. 4

    Mix peanut lime dressing in a food processor then add water gradually to thin

  5. 5

    Cook garlic then add coconut milk

  6. 6

    Add in bellpepper and sweet potato noodles cover and cook 5 to 7 mon

  7. 7

    Add everything together in the pot
