Shepherd's pie is a hearty, savory, and comforting food. Traditional Shepherd's pie is made with ground lamb, and if you use ground beef instead of lamb, it's called Cottage pie. I know ground beef is more widely available, but my first choice of meat was lamb for our friend who is an Irish descendant ;-)

材料

6 servings
  1. for the filling:
  2. ground lamb/beef 1 lb
  3. yellow or sweet onion (diced) 1 medium
  4. carrots (diced) 2 large
  5. celery (diced) 1 rib
  6. garlic (minced) 2 cloves
  7. unsalted butter 2 tablespoons
  8. red wine 1/2 cup
  9. tomato paste 2 tablespoons
  10. Worcestershire sauce 1 tablespoon
  11. kosher salt 1 teaspoon
  12. freshly ground black pepper 1/2 teaspoon
  13. dijon mustard 1 teaspoon
  14. fresh Italian parsley (minced) 2 tablespoons
  15. dried tyme 1 teaspoon
  16. dreid rosemary 1 teaspoon
  17. better than bouillon beef base 1 teaspoon
  18. all-purpose flour 2 tablespoons
  19. water 1 cup
  20. frozen corn 1/2 cup
  21. frozen peas 1/2 cup
  22. for the potato:
  23. yellow potatoes 2 lb (peeled and chopped)
  24. kosher salt (for potato water) 2 teaspoons
  25. Irish unsalted butter 4 tablespoons
  26. whole milk 3/4 cup
  27. sour cream 2 tablespoons
  28. garlic powder 1/2 teaspoon
  29. kosher salt 1/2 teaspoon
  30. freshly ground black pepper 1/4 teaspoon
  31. mild cheddar cheese 50 g (shredded)
  32. for a garnish:
  33. fresh Italian parsley 1 tablespoon (finely chopped)

    For the potatoes:

    Put potatoes in a medium pot. Submerge potatoes in water.

    Add 2 tsps salt. Bring to a boil, then simmer until tender.

    Drain the water well and transfer them back to the pot.

    Leave in the pot for 2 mins to evaporate any excess moisture

    Add butter/milk/cream/garlic/salt/pepper and mash well.

    Add cheese, and use rubber spatula to stir to combine.

    For the filling:

    Melt butter in a large Dutch oven over medium heat.

    Add onion/carrot/celery/garlic and cook for 5 minutes.

    Add the lamb, then break it up, and cook until browned.

    Add wine and cook/stir until the wine almost cooks off.

    Add tomato paste and cook for 1 minute.

    Stir in sauce/salt/pepper/mustard/parsley/thyme/rosemary.

    Stir in flour until well blended with no dry spots.

    Slowly pour in water while stirring to incorporate.

    Add bouillon, corn and peas.

    Bring to a boil, and reduce to a simmer.

    Simmer for 5 minutes, stirring occasionally. Set aside.

    For the assembly:

    Preheat the oven to 375 F.

    Grease the baking dish with olive oil or butter.

    Transfer the filling into a baking dish,

    Spread the filling out on an even layer.

    Scoop the mashed potatoes on top of the filling.

    Spread the mashed potatoes out on an even layer.

    Bake for 30-40 mins or until bubbling and golden brown.

    Serve.

コツ・ポイント

Russet potatoes are a typical ingredient used as a topping, but I chose yellow potatoes for a buttery and smooth texture
