材料

4-5 servings
  1. bean thread noodle 2 oz
  2. soft tofu (cut into cube sized pcs) 1 p (14 oz)
  3. shrimp (peeled and de-veined) 1/2 lb (10-12 shrimps)
  4. oyster mushroom (shredded) 1 cup (3.5oz/100 g)
  5. scallion (thinly sliced) 3
  6. water 1000 ml
  7. chicken bouillon powder 1 tablespoon
  8. sake 1 tablespoon
  9. tamari soy sauce 1 tablespoon
  10. kosher salt to taste
  11. freshly ground black pepper to taste
  12. potato starch 1 teaspoon + 1 teaspoon water
  13. toasted sesame oil 1 teaspoon

作り方

    Prepare the ingredients!

    Soak the noodles in warm water for 10 minutes.

    Drain well and cut into 2-3 inch pieces. Set aside.

    In a medium pot, add water, bouillon, sake and soy sauce.

    Bring to a boil, then add tofu, mushroom, shrimp, and cook.

    Bring to a simmer, add noodles. Cook 3 minutes.

    Season with salt and pepper.
    Turn off the heat.

    Combine water and starch, mix well. Drizzle over the soup.

    Bring to a simmer once more. Cook and keep stirring 1 min.

    Stir in scallion and drizzle sesame oil over the soup.

    Taste, add salt and pepper as needed. Serve!

コツ・ポイント

This recipe calls for soft or silken tofu, but if you want to have some texture, use medium/extra firm tofu instead!
