This was kind of thrown together one day, had a lack of groceries in the house to make a complete meal, just had these ingredients lying about. So I decided to experiment...and BAM! It's delicious.

This was kind of thrown together one day, had a lack of groceries in the house to make a complete meal, just had these ingredients lying about. So I decided to experiment...and BAM! It's delicious.

Ingredients

  1. 1 quartVegetable Broth
  2. 1 cupFresh Snow Peas
  3. 1 cupFresh Mixed Peppers (Red, Yellow, Orange)
  4. 1 cupFresh Mushrooms
  5. 1 cupFresh Carrots
  6. 1 cupFresh Broccoli
  7. 1/3 cupFettuccini Pasta
  8. 1/3 cupRice (any kind)
  9. 1/3 cupPasta Shells
  10. 4 tbspButter
  11. 1 tbspMinced Garlic
  12. 1 tbspItalian Seasoning
  13. 2 tbspCream Cheese
  14. 3 cupMilk

Cooking Instructions

30 mins
  1. 1

    Take a large cooking pot and pour in the veggie stock and fresh veggies. Add in the minced garlic and Italian seasoning.

    In a separate pot combine butter, cream cheese, and milk.

  3. 3

    Brink milk mixture to a boil. Add in pasta and rice.

  4. 4

    Allow both pots to cook all the way. Veggies should only be done Al'dente. (Veggies cook 5 minutes after broth has boiled) (pasta should take 15 minutes)

    Combine in a large bowl, and serve.
