Ingredients

  1. 2small pieces Jaifil (Nutmeg)
  2. 2-3Javatri (Mace)
  3. Halftsp Sabut kali mirch (Black peppercorns)
  4. 1Badi elaichi (Black cardamom)
  5. 1 inchpiece Adrak (Ginger)
  6. 4-5(cloves) Lehsan (Garlic)
  7. 8-9Hari mirch (Green chilies)
  8. 2 tbsor as required pani (water)
  9. 1/2 CupCooking oil
  10. 1medium Pyaz (Onion) sliced
  11. 1 tspZeera (Cumin seeds)
  12. 2-3Darchini (Cinnamon sticks)
  13. 10Sabut kali mirch (Black peppercorns)
  14. 4-5Laung (Cloves)
  15. Hari elaichi (Green cardamom) 3-4 -
  16. 1& half tsp or to taste Namak (Salt)
  17. 1 tspor taste Lal mirch powder (Red chilli powder)
  18. Halfcup Dahi (Yogurt) whisked
  19. 1Chicken stock cube
  20. Podina (Mint leaves) chopped ½ Cup -
  21. 2-3 cupswater or az required
  22. 250 gmsChanay (Chickpeas) boiled
  23. Chawal (Rice) basmati ½ kg (soaked)
  24. 2medium tomato sliced

Cooking Instructions

  1. 1

    In spice mixer,add nutmeg,mace,black peppercorns,black cardamom and grind well. Add ginger,garlic,green chilies,water and grind to make a paste & set aside.

    In pot,add cooking oil,onion and fry until light golden. -Add cumin seeds,cinnamon sticks,black peppercorns,cloves,green cardamom and mix.

    Now add grinded paste and mix well.Add tomatoes salt,red chilli powder and mix well for 2 minutes.

    Add yogurt and mix well. -Add chicken stock cube,mint leaves and mix well. -Add water,mix well and bring it to boil.

  5. 5

    Add chickpeas and rice,mix gently and bring it to boil. -Cook on medium high flame until water is reduced (8-10 minutes). -Cover and steam cook on low flame for 5-8 minutes & serve! Special Chana pulao is ready😍
