  7. 1/2 Nutmeg
  8. 1/2 Mace
  9. 1 Black Cardamon
  10. 4-5 Green Cardamon
  11. 1 tsp Black papper whole
  12. 5-6 Cloves
  13. 1/2 Star anise (optional)
  14. 2 Dried Red Chili
  15. 3 Bay leaf
  16. 2 Sticks (1 Inch) Cinnamon
  17. 1 tsp Caraway seeds
  18. Biryani Cooking
  19. 1/2 cupOil
  20. 500gm (6-7 )Chopped Onion (deshi onions)
  21. According to taste (1.5 tsp)Salt
  22. 1.5 tbspGarlic paste
  23. 1.5 tbspGinger paste
  24. 2tbspBiryani powder
  25. 1/2 tspRoasted Cumin powder
  26. 6-7 pcsGreen Chilli
  27. 1 wholeMarinated Chicken
  28. 1kg (4 cups)Chinigura rice
  29. 1.75 kg/litreWater
  30. 10-12 Alu bukhra

রান্নার নির্দেশ

    To marinate the chicken add all the ingredients in a sealed container and marinate for at least 1hr, refrigerate if longer.

    To make the biryani powder mix, mix all the spices in a blender until powder.

    Add 1/2 cup of oil in a pan. Add 500gm of chopped onions, fry till soft and light brownish.

    At this point, add salt, ginger paste, garlic paste, biryani powder, roasted cumin powder and 1/2 cup of water. Fry till the water dries out.

    Then add the marinated chicken and the yogurt that was used to marinate the chicken, and fry them till a thick golden brown colour, then add green chilli. (usually 10-15 minutes)

    Once the chicken is golden brown in colour, add in the washed and rinsed rice, and fry it for 5 minutes.

    Then add the water. it is a very calculated measurement, do not make any mistakes. Add in boiling 1.75 litre of water. Keep the flame at high heat till the rice boils. Stir so that it doesn't stick.

    Once the rice is at a boil, lower the heat at the lowest temp and keep the lead closed for at least 45min to 1hr. (tip: use a tawa under the karai you are cooking on)

    After 1hr of steam in low heat, serve with crispy onion fries.
