রান্নার নির্দেশ

20 mins
  1. 1

Step 1 – heat a pot a water to boil the pasta

  2. 2

Step 2 – Dice the spicy Italian beef sausages

  3. 3

Step 3 – Making the Miso Carbonara sauce
We will need 1 egg yolk and 3 whole eggs. Add them together. Grate parmesan cheese on the eggs (1 cup). Add ½ tsp pepper. Mix them well with a whisk. We will need a smooth sauce so a lot of whisking. It took me about 5 minutes to get a smooth sauce.

  4. 4

Step 4 – Cooking the sausage
Heat a pan on med heat. Add the sausages. It has some fat in it so no need to add any oil at the beginning. I wanted a rich flavor so added a knob of butter later. Then add 2 tsp minced garlic and 2 tbsp scallion (bottom part only). Cook for few mins. By now we should be able to add pasta to the boiling water. Leave the heat on med and lets go the pasta pot.

  5. 5

Step 5 – Cooking the pasta
Add 2 tsp salt to the boiling water and add the pasta. I like mine al dente so cooked it for 8-10 minutes.

  6. 6

Step 6 – Add pasta to the pan directly from the pot
Add the pasta to the pan directly from the pot and mix well.

  7. 7

Step 7 – Adding Miso Carbonara sauce to the pan
Add the miso carbonara sauce to the pan and cook for 5-7 mins while mixing the pasta and sauce frequently. I needed to add some pasta water to keep it creamy.

  8. 8

    Step 8 – Garnish
Sprinkle some smoked paprika. It will add a nice kick. Grate some fresh parmesan on top. Add scallions. Lastly add some furikake. It’s a Japanese rice condiment. It adds great umami to the overall flavor. Enjoy!!

I love cooking because its fun. It’s a way to express myself. Its an universal language which everyone understands. Cooking is an art where a doodle can be delicious. There’s such a large spectrum of experimentation, the possibilities are endless and the outcome is edible which is fantastic. Any process which involves all our 5 senses for gratification is bound to deliver joy and pleasure. Food is something to be shared. There is no right or wrong in cooking as long as its delicious. Cooking doesn’t have to be hard. It should be a mix of tradition, convenience and mostly indulgence. And it also should be about what works for you. Its all about experiencing the flavors of the world and enjoying it. It’s a continuous learning process which is never ending but its fun and fulfilling. Cooking is food for my soul. It gives me an opportunity to nurture my family and friends, express my love and care for them. Learning, exploring, creating, connecting with other cultures and people, inner peace, control of ingredients and techniques, making memories, passing on skills, learning about nutrition, participating in traditions and creating new ones, I can keep going- but these are the main reasons why I love cooking.Follow me on YouTube https://www.youtube.com/channel/UCKRcitFRiA5vBw20oGKnQDgInstagram: kiron_ahsan
